Cavendish Farms was established as a consumer-facing business when the Irving Group acquired the C.M. McLean vegetable-processing facility in Prince Edward Island in 1980 and renamed it. The brand belongs to the Irving group; its head office is in Dieppe, New Brunswick.

Cavendish Farms lists potato-processing facilities in New Annan, PEI and Lethbridge, Alberta, plus Wheatley, Ontario, but also a facility in Jamestown, North Dakota. Canadian production is established for a subset of the organization's output, while specific retail SKUs and Product of Canada labelling have not been traced.
